    Corn & Courgette Fritters

    Hiya peeps! Howz it goin! Thank you to the ones who reminded me of my Toddler Finger Food series. So, here I’m, once again , with another tempting yet nutritious finger food recipe for the littlies! I hope it will help out my fellow mothers in a great way. Here sharing an easy peasy recipe of Corn & Courgette Fritters that is nutritious, yummy, visually appealing, has crunchy texture (which I believe is preferred by almost every toddler) and a big plus, this recipe is customisable to older kids and adults too.
    It contains highly nutritious ingredients important for a balanced meal for your fast-growing toddlers.


    ✨Multigrain Flour – 1 Cup
    I’m using @aashirvaad Multigrain Flour that is made of wholesome goodness of six different grains – wheat, soya,bengal gram, oats, maize and psyllium husk. These ingredients are full of proteins, vitamins, minerals and fibre. Hence, a healthier alternative to any flour, especially the plain flour.

    ✨Corn Kernels (Steamed) – ⅓ Cup
    Corn is rich in Vitamin B12, folic acid and iron which helps in the production of red blood cells in the body.

    ✨Courgette (Shredded) – ⅓ Cup
    Now, Courgette is again full of Vitamin A,Manganese,Vitamin C,Potassium,Magnesium,Vitamin K, Folate,Copper,Phosphorus, Vitamin B6,Thiamine plus small amounts of Iron, Calcium and zinc.

    ✨ Organic Yogurt (One Spoon or as needed for the desired consistency of batter)
    Organic Yougurt also known as Indian Yogurt is rich with Fat and Calcium which play very important role in development of a toddler.

    ✨ Shredded Cheese (1 big Spoonful)
    Chesse is again full of goodness of Vitamin A, Calcium,Vitamin D,Vitamin B-6,Cobalamin and Magnesium

    ✨ Salt & Pepper as per your toddler’s taste

    💡 Recipe:

    ✨Mix all the ingredients and work it into a thick, pancake batter-like consistency.
    ✨Heat a large non stick frying pan over medium low heat and grease lightly with butter, ghee or oil.
    For each fritter, place 1 to 2 tablespoons of batter into the pan. Cook for 2 minutes, turn and cook for a further 1 to 2 minutes or until the fritters are cooked through.
